The red azuki beans are in the form of tsubuan (smooth red bean paste) or koshian (coarse red bean paste).

  1. Take 200 ml Water
  2. Get 4 grams Powdered kanten
  3. Prepare 250 grams Anko

There are several flavors of Yokan in Japan. For example, Red bean, white kidney bean, chestnuts, persimmons, sweet potato, and so on. Yokan in Japanese or yang'geng in Chinese is a pastry based on azuki bean paste and gelling agent (agar-agar or gelatin). We are making cold, smooth and refreshing Mizu Yokan, jellied dessert with red bean paste.

Steps to make Mizu-Yokan (Sweetened and Jellied Bean Paste):
  1. Put the water in a small pot, sprinkle in the powdered kanten, and heat over medium heat.
  2. Gently stir with a wooden spatula to dissolve the powdered kanten. Be careful not to boil it.
  3. Remove from the heat, and add the anko in 3 batches.
  4. Mix well with the wooden spatula after each addition.
  5. Turn the heat on low, and mix well from the bottom of the pot until there are no lumps in the mixture.
  6. Turn off the heat, and place the bottom of the pot in iced water.
  7. Cool the mixture until it thickens a little.
  8. Lightly wet a plastic container or a mold, pour the mixture from Step 7 into it, and leave in the fridge for about 1 hour to set.
  9. Once it's set, remove from the fridge. Insert a knife along the sides of the container to loosen.
  10. Flip over the container to release the mizu-yokan.
  11. Cut into desired sizes. It's done!

Yokan in Japanese or yang'geng in Chinese is a pastry based on azuki bean paste and gelling agent (agar-agar or gelatin). Cold water fish are great for eating if you want to fight depression. Cold water fish including tuna, trout and wild salmon are high in DHA and omega-3 fatty acids. These are two things that improve the quality and the function of your brain’s gray matter. It’s true: eating a tuna fish sandwich can greatly raise your mood.

It’s not difficult to fight your bad mood when you consume grains. Barley, quinoa, millet, teff, etc are all good for helping you feel better. They help you feel full as well which can actually help to better your mood. Feeling famished can be terrible! These grains can help your mood elevate because it’s not at all hard for your body to digest them. These foods are easier to digest than others which helps promote a rise in your glucose levels which in turn takes your mood to a happier place.

Your mood can really be helped by green tea. You were just anticipating to read that here, weren’t you? Green tea is loaded with an amino acid referred to as L-theanine. Studies prove that this particular amino acid can basically induce brain waves. This will better your brain’s concentration while simultaneously relaxing the rest of your body.
